Eggs in Baskets

Cook time: 15 minutes
Serves: 2

Ingredients
    • 4 slices whole-wheat bread, crusts removed
    • 4 eggs
    • salt and pepper
    • 1/2 cup shredded Cheddar
    • 1 small tomato, diced
    • 1/4 cup ham, diced

    Directions:
    1. Preheat oven to 400.
    2. Flatten each slice of bread and press each slice into a small, oven-proof dish.
    3. Break one egg into each "basket" and season with salt and pepper.
    4. Bake for 10 minutes, then sprinkle each basket with cheese, tomato and ham.
    5. Bake for 5 more minutes or until the egg whites are set and the bread is toasted.

    I discovered this recipe when Charlotte was very young and I was on a mission to improve my repertoire in the kitchen.  It's so easy to make that the preparation is finished before the oven is even up to temperature!  This dish makes a frequent appearance at our weekend breakfast table - and sometimes it even shows up for supper.  We love it just that much!
