Ingredients
- 4 slices whole-wheat bread, crusts removed
- 4 eggs
- salt and pepper
- 1/2 cup shredded Cheddar
- 1 small tomato, diced
- 1/4 cup ham, diced
Directions:
- Preheat oven to 400.
- Flatten each slice of bread and press each slice into a small, oven-proof dish.
- Break one egg into each "basket" and season with salt and pepper.
- Bake for 10 minutes, then sprinkle each basket with cheese, tomato and ham.
- Bake for 5 more minutes or until the egg whites are set and the bread is toasted.
I discovered this recipe when Charlotte was very young and I was on a mission to improve my repertoire in the kitchen. It's so easy to make that the preparation is finished before the oven is even up to temperature! This dish makes a frequent appearance at our weekend breakfast table - and sometimes it even shows up for supper. We love it just that much!
