Breakfast Pizza

Ingredients
  • 2 tbsp. light cream cheese or peanut butter
  • 1 4-inch whole grain pita
  • 1/2 apple or banana, thinly sliced
  • 1 tbsp crisp rice cereal
  • 1 tbsp chopped dried fruit
  • 1 tbsp chopped nuts or shredded coconut
  • 1 tbsp strawberry jam, melted

Directions
  • Spread cream cheese on the pita.
  • Arrange apple or banana over top.
  • Sprinkle with cereal, dried fruit and nuts.
  • Drizzle with strawberry jam.
  • Cut into 4-6 wedges.

The recipe may be called "Breakfast Pizza", but for us, this meal is more of a lunch or a snack than something to eat for breakfast.  With cream cheese rather than peanut butter and without the fresh fruit, this makes a great lunch for daycare!
