Ingredients
- 2 tbsp. light cream cheese or peanut butter
- 1 4-inch whole grain pita
- 1/2 apple or banana, thinly sliced
- 1 tbsp crisp rice cereal
- 1 tbsp chopped dried fruit
- 1 tbsp chopped nuts or shredded coconut
- 1 tbsp strawberry jam, melted
Directions
- Spread cream cheese on the pita.
- Arrange apple or banana over top.
- Sprinkle with cereal, dried fruit and nuts.
- Drizzle with strawberry jam.
- Cut into 4-6 wedges.
The recipe may be called "Breakfast Pizza", but for us, this meal is more of a lunch or a snack than something to eat for breakfast. With cream cheese rather than peanut butter and without the fresh fruit, this makes a great lunch for daycare!
