Ingredients
- 3 cups popped popcorn
- 1 tbsp. fresh thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 3 tbsp. all-purpose flour
- 1 pound skinless, boneless chicken in 2-inch pieces
- 1 tbsp. unsalted butter
- 1 tbsp. canola oil
Directions
- Grind popcorn after removing unpopped kernels.
- Place popcorn in a shallow dish; mix in thyme, salt and pepper.
- Place the egg in a shallow bowl; beat with 1 tbsp. water.
- Place flour in another shallow dish.
- Coat chicken in flour, shaking off the excess.
- Dip in egg mixture, then in popcorn to coat.
- Heat butter and oil over medium-high heat.
- Cook chicken 10-12 minutes, turning occasionally.
What kid doesn't like popcorn? Charlotte certainly does! I always set aside a few kernels as a "garnish" for the chicken and Charlotte is thrilled to have popcorn for dinner. So am I, if it comes to it!
